Welcome
to our column. We hope that you will return to
learn interesting notes on wine, and related
subjects. Wine is a great gift from God to be used
for the enjoyment of man. It is a food, and should
be treated as such. It is meant to lift up the body

Life does
not slow down after the wine is made...
This is
because the wine maker is getting older, or that we are
living too fast a life style or both. You would think that
you could slow down for a bit after you get the wine in the
barrels. But no, there are still so many things to do. So
you pour yourself a glass of wine, and off to work you
go.
Remember to check the SO2 levels in the new wine. It is
important to keep the wine protected. Racking the wine is
another important part of wine making. Do not allow the wine
to rest on the settlings for a very long period. You want
the wine to be housed in a clean barrel or tank.
Stuck wines are a problem. Be sure to observe the wines
weekly. This will allow you to catch a problem before it
becomes a major problem and does major damage to the wine.
Another problem can be a barrel or tank that is not sealed
correctly against the leakage of air. Be sure to check your
seals on all tanks and barrels.
Do not allow the vineyard to be alone and unmanned. You need
to check for vines that are poor or that have died in the
heat of last summer. Remember that a vine may be alive and
look dead. Prune from the ends in until you find green and
alive wood
This is also the time for check for broken post and wires.
By walking the vineyard, you will be able to form a game
plan for working the vineyard. It may be a few weeks before
you start working and pruning, but you will have the game
plan ready and well thought out when you do start.
"You say that this is a lot of work"
well yes it is,
but look and taste the fine wines that you have made and are
enjoying with friends. Well worth it. So now let's share a
