Notes From the Vintner Welcome to our column. We hope that you will return to learn interesting notes on wine, and related subjects. Wine is a great gift from God to be used for the enjoyment of man. It is a food, and should be treated as such. It is meant to lift up the body and lighten the soul. 10/01/05 Let us start these notes with a fine glass of our wine… for the crush this year is over for all the fresh fruit. Most wine makers should be finished with their crush and the wine in making should be close to finished in storage tanks. So why not start this with a glass of wine…we earned it ! ! ! So what is the next thing to do??? This time you tell me. I am listing below a some of items that you may thing should be done next…Please mark the things in order (with the number 1 being the most important), that you need to do next in your home winery. There is no correct order. The key to this is to make you think and to act. Make sure that all vessels of wine have correct amounts of SO2. Repair any equipment damaged in the crush. Review your records and correct any skips of information about the crush. Check the air locks and be sure they have water. Rack the wines that are ready. Top off an vessel that needs additional wine. Make sure that all aged wine is sound. Clean, sharpen, and oil all the cutters used in the harvest. Run tests on the new wine. Do a good cleaning of the crush area, and the storage area. Make notes of what you have to do the rest of the year. Now all this is simple to do on paper. We sometimes like to sit back and enjoy nothing after we work very hard. This is okay for a bit…but we must remember that we put in a lot of hard work getting the wine into the tanks. This is not the time to screw up.
