Notes From the Vintner

Welcome to our column. We hope that you will return to learn interesting notes on wine, and related subjects. Wine is a great gift from God to be used for the enjoyment of man. It is a food, and should be treated as such. It is meant to lift up the body and lighten the soul. 1/01/08

Happy New Year to All…Well we made it to another year. It's a start of new beginnings, plans, dreams, projects, joys, happiness's, and so many things. It's time to do better, enjoy life more, and to love your family and friends more. New Year's is like a second chance--a time to get it more correct.

All the above is true, but what is truer, is that the first of January is but another day in our journey to a better life. There is nothing magical about this date. What is magical is your attitude about your life and how you live it. If it takes a special day of the year to make you aware of how you are doing, then so be it. Take some time to enjoy where you are in life, and where you are going. Make any corrections to your course and enjoy every minute of it. This is your only shoot at living. So let us stop for a few minutes, right in the middle of these words, and enjoy a small glass of wine.

Now that we have had food for thought, and wine for the spirit, let us talk about something that we sometimes overlook. What is the SO2 level in your wine? What is the Ph of your wine? When your wine is finished, you must keep an ever-watchful eye on its ageing and storage. Also, be sure to check for additional settlings in your containers. If you see any stuff on the bottom of the vessel, rack the vessel and pitch the settlings. These settlings can only cause problems in the wine, and may cause you to lose the whole vessel.

Your records need to be checked, and any comments and corrections made to the wine must be added. It is important to know what went wrong with the wine, but it is of UTMOST importance to know what went RIGHT so you can produce quality wine each time you make it.
