to our column. We hope that you will return to
learn interesting notes on wine, and related
subjects. Wine is a great gift from God to be used
for the enjoyment of man. It is a food, and should
be treated as such. It is meant to lift up the body

if not, the next best. Had a great year last year with
many improvements to the winery and the operations of
it.
The season did not end for me until the last week of
December. I took a trip to Wisconsin to get some White
Cranberries and Cherries from a friend Marv Hietpas. (these
fruits are now resting in tanks in the form of wine) He is
the wine maker who won the gold coin this last year in our
competition. Also visited with Richard and Adam while I was
there. On the way, I stopped by to see Raymond Meyer and Jim
Wight in Kentucky. Being an ordained minister, I blessed the
cellars of these three wine makers. We always believe it
proper to give thanks for this art and joy that we are
caught up within. This, 2006, will be my 51st year of making
wine. A long time to be able to enjoy a love affair.
Counting blessing is a joy, and a real joy when doing so
with a glass of fine wine.
This is the time of the year that we start over to improve
ourself and the way we think, speak, and do. This is true
with our winemaking. All of us know what we need to improve,
so lets just get started. We do not have to have someone
tell us what we need to be doing
we just have to get
started. And this shoe fits me very tight also
So before we enjoy another glass, copy this info on adding
SO2 at each racking of your wine:
- ppm X gal X
.007568 = grams of KMS
- 20 (ppm) X 100
gal X .007568 = 15.14 grams
Now each time you
rack in 2006
.add the SO2 for protection.
