subjects. Wine is a great gift from God to be used
for the enjoyment of man. It is a food, and should
be treated as such. It is meant to lift up the body

How about a
slice of History
Wine
History that is
. It is important that we never fail to
learn from history, for from the life of the past comes the
light of the future. This is also true in the enjoyment and
making of wine.
We have talked about this before, and we shall talk about it
again. You have to keep records, and notes about your wine
making life. To make a fine wine, and not remember what you
did is a sin. Records are for your aid, not something that
is a pain. It is important that all your records are in a
notebook or binder. This way you can look over the last
several years with ease.
Your wine making for each year is a chapter in the history
of yourself. You need to make it interesting, not stiff and
dry. Add notes and comments about what others have said
about your wine. The good and the bad
.for the bad will
cause you to work harder next year, and also remind you not
to give that person a sample of your labor again
Start with the condition of the fruit, dates picked,
crushed, and pressed. At comments about the sugar, acid, and
pH. List the amount of time the juice was on the skins, what
type of yeast and any other additives that you have used.
There are many other things that you can record that make
your records just that
.Your Records.
Some of us want our records to be nice and neat, everything
lined up correctly. But I can tell you that is the
idea
not the normal way of doing things. Everyone is so
busy that we just scribble down a note and go on. So do not
worry if the notes are a bit of a mess. You are the only one
that has to read them. And if you have a hard time reading
them, just start enjoying a glass of wine.
